Slice the bagels in half horizontally and set them aside.
In a non-stick skillet over medium heat, add 1 tablespoon of butter and let it melt.
Place the sliced bagels, cut side down, into the skillet and toast for 2-3 minutes or until golden brown. Remove and set aside.
In the same skillet, melt the remaining 1 tablespoon of butter.
Add the vegetarian ham slices and cook for 1-2 minutes on each side until they are slightly browned and warmed through. Remove from heat.
Spread 1 tablespoon of cream cheese on each cut side of the toasted bagels.
On the bottom half of each bagel, layer 1 slice of vegetarian cheese, 2 slices of cooked vegetarian ham, a handful of baby spinach leaves, a few slices of tomato, and a few slices of red onion.
Season with salt and black pepper to taste.
Top each with another slice of vegetarian cheese.
Place the top half of the bagel over the fillings and gently press down to hold everything together.
Serve immediately while the cheese is melty and enjoy your vegetarian ham and cheese bagel!
