Elevate your mealtime with this vibrant Vegetarian Caesar Side Salad, a lighter spin on the classic that’s bursting with bold flavors and satisfying textures. Crisp Romaine lettuce forms the foundation of this dish, while golden homemade croutons made from French bread add a delightful crunch. The creamy, tangy dressing—a vegetarian blend of Dijon mustard, lemon juice, garlic, and Worcestershire sauce—perfectly complements the richness of grated Parmesan cheese. Ready in just 25 minutes, this salad is an effortless side dish that pairs beautifully with pasta, soups, or grilled vegetables. Whether you serve it fresh or chilled, it’s a crowd-pleasing favorite ideal for any occasion.
Preheat oven to 375°F (190°C).
Cut the French bread into small cubes to make croutons.
Place the bread cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and toss to coat.
Bake in the preheated oven for 10 minutes, or until golden and crisp. Set aside to cool.
Meanwhile, wash and chop the Romaine lettuce into bite-sized pieces. Set aside.
To prepare the dressing, mince the garlic clove.
In a medium bowl, whisk together the minced garlic, Dijon mustard, lemon juice, Worcestershire sauce, mayonnaise, remaining 2 tablespoons of olive oil, salt, and black pepper until smooth.
In a large salad bowl, combine the chopped Romaine lettuce and Parmesan cheese.
Add the prepared dressing to the lettuce mixture and toss to coat thoroughly.
Add the cooled croutons to the salad and gently toss.
Serve immediately as a side salad, or chill in the refrigerator for up to 30 minutes before serving.
