Preheat the oven to 400Β°F (200Β°C).
In a large mixing bowl, mash the chickpeas with a fork or potato masher until mostly smooth.
Add the vital wheat gluten, nutritional yeast, smoked paprika, fennel seeds, garlic powder, and onion powder to the chickpeas.
Mix in the soy sauce, 1 tablespoon of olive oil, and water until a dough forms. Knead the dough for 3-5 minutes until elastic.
Shape the dough into 4-6 sausage links.
Wrap each sausage link in aluminum foil, twisting the ends to seal.
Place the wrapped sausages on a baking sheet and bake for 25 minutes.
