Warm the almond milk to about 40°C (104°F).
In a large bowl, mix warm almond milk, melted coconut oil, and maple syrup. Add the instant yeast and stir gently. Let it sit for about 5 minutes until bubbles form on the surface.
In a separate bowl, mix the all-purpose flour and salt.
Add the flour mixture to the yeast mixture, a little at a time, stirring until a soft dough forms.
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp tea towel, and let it rise in a warm place for about 1 hour or until it has doubled in size.
While the dough is rising, wash and dry the blueberries.
Once the dough has risen, roll it out on a lightly floured surface into a rectangle about 1 cm thick.
Sprinkle the surface with brown sugar, cinnamon, and lemon zest.
Distribute the blueberries evenly over the dough.
Carefully roll the dough into a log, sealing the edges.
Cut the log into approximately 12 equal pieces and place them in a greased baking dish, cut side up.
Cover with a tea towel and let the rolls rise for another 30 minutes.
Preheat the oven to 180°C (350°F).
Bake the blueberry buns for 20-25 minutes until golden brown.
