Begin by pressing the tofu to remove excess moisture. Wrap the tofu block in a clean kitchen towel and place a heavy object, like a cast iron skillet, on top. Let it sit for 15-20 minutes.
While the tofu is pressing, prepare the flaxseed mixture. Combine the ground flaxseed with 6 tablespoons of water in a small bowl and let it sit for about 10 minutes until it thickens.
Peel and core the apple, then finely grate it using a box grater or food processor.
In a large mixing bowl, crumble the pressed tofu using your hands or a fork until it resembles a fine texture.
