Season the chicken breasts on both sides with salt and black pepper.
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, sear the chicken for 4-5 minutes on each side until golden brown. Remove from the skillet and set aside.
In the same skillet, lower the heat to medium and add 1 tablespoon of olive oil. Stir in the minced garlic and cook for about 30 seconds, until fragrant.
Add the balsamic vinegar, honey, sun-dried tomatoes, and chicken broth to the skillet, stirring well to combine. Reduce the heat to low and let the mixture simmer for 2-3 minutes until slightly thickened.
Return the chicken breasts to the skillet, spooning some of the glaze over them. Cover the skillet with a lid and cook for an additional 10-12 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).
Add the chopped rosemary and baby spinach to the skillet during the last 3 minutes of cooking, stirring gently until the spinach is wilted.
