Peel and boil the potatoes in a pot of salted water until tender, about 15-20 minutes.
While the potatoes boil, heat the sausages in a skillet or boiling water until fully cooked and warmed through.
Once the potatoes are tender, drain and mash them using a potato masher.
Add butter, milk, salt, and white pepper to the mashed potatoes. Mix until smooth and creamy. Set aside.
Lay out one sheet of flatbread (tunnbröd) on a clean surface.
Spread about 1/2 cup of the mashed potatoes onto the center of the flatbread.
Place one cooked sausage on top of the mashed potatoes.
Top with one strip of pickled cucumber, 1 tablespoon mustard, 1 tablespoon ketchup, 1 tablespoon crispy fried onions, and 30 grams of shrimp salad if using.
Carefully roll the flatbread around the fillings, securing it tightly to form a wrap.
Repeat with the remaining flatbread and ingredients to make four rolls.
