Pat the trout fillets dry with paper towels. In a shallow dish, combine the flour, salt, and black pepper. Lightly dredge the trout fillets in the flour mixture, shaking off any excess.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large non-stick skillet over medium heat. Once the butter is melted and foamy, add two of the trout fillets, skin-side down.
