Peel and finely grate the beets and carrot. Peel and chop the potatoes into bite-sized cubes. Finely chop the onion. Thinly slice the half head of cabbage.
In a large pot, heat 2 tablespoons of sunflower oil over medium heat. Add the grated beets and 1 tablespoon of lemon juice or vinegar to the pot. Cook for about 5 minutes, stirring occasionally, then add 1 tablespoon of tomato paste and continue cooking for another 10 minutes.
Meanwhile, in a separate pan, heat 1 tablespoon of sunflower oil over medium heat. Add the chopped onion and carrot. Cook until the onion is translucent, about 5 minutes. Add 1 tablespoon of tomato paste and mix well.
Add the onions and carrots to the pot with the beets and stir to combine all the vegetables together.
Pour in 8 cups of vegetable or beef broth into the pot, and bring to a gentle boil. Reduce heat to medium-low, cover, and let it simmer for about 10 minutes.
