Peel the green plantains by cutting off the ends and making a shallow lengthwise slit down the skin. Gently pry the skin off with your fingers or a knife.
Cut the plantains into 1-inch thick slices.
Heat the vegetable oil in a large skillet or heavy pot over medium heat until it reaches 350°F (175°C).
Fry the plantain slices in batches for 3-4 minutes per side, or until they are golden but not fully crisp. Remove using a slotted spoon and drain on paper towels.
