Peel and wash the potatoes. Slice them into thin, even rounds, about 3 mm thick.

Peel the onion and slice it into thin strips.

Heat the olive oil in a large nonstick frying pan over medium heat. Add the potatoes and onions, ensuring they are fully submerged in the oil. Cook for 15-20 minutes, stirring occasionally, until the potatoes are tender but not browned.

Using a slotted spoon, carefully remove the potatoes and onions from the pan and transfer them to a large bowl. Let them cool slightly.

In a separate bowl, whisk the eggs with salt and black pepper. Pour the eggs over the cooled potato and onion mixture and stir gently to combine.

Heat 2 tablespoons of the reserved olive oil in a smaller nonstick frying pan (about 8-10 inches in diameter) over medium-low heat. Pour the potato-egg mixture into the pan and spread it out evenly.
