Bring a large pot of salted water to a boil and cook the cheese tortellini according to package instructions. Drain and set aside, reserving 1/2 cup of the pasta water.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Cook the turkey sausage, breaking it up into small pieces with a spatula, until browned and fully cooked, about 6-8 minutes. Remove the sausage from the skillet and set aside.
