Preheat your oven to 180°C (350°F).

Wash the tomatoes thoroughly and slice them in half horizontally. Scoop out the seeds and inner pulp with a spoon, being careful not to pierce the skin. Set the tomato halves aside.

Finely chop the garlic, parsley, and thyme leaves. In a mixing bowl, combine the breadcrumbs, chopped garlic, parsley, thyme, salt, pepper, and half of the olive oil. Mix well until the breadcrumbs are evenly coated in oil and herbs.

Place the tomato halves, cut side up, on a baking dish or oven-proof tray. Generously spoon the breadcrumb mixture into the hollowed-out tomatoes, pressing lightly to pack the stuffing.
