Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
In a large mixing bowl, combine ground pork, lemongrass, ginger, garlic, red chili (if using), fish sauce, soy sauce, brown sugar, lime zest, cilantro, and green onions. Mix until well combined.
On a floured surface, roll out the puff pastry sheets (if not pre-rolled) to about 3mm thick. Cut each sheet in half lengthwise to create 4 long strips in total.
Divide the pork mixture into four equal portions and shape each portion into a long sausage shape, approximately the same length as the pastry strips.
Place one sausage-shaped portion of the pork mixture along the center of each pastry strip.
Brush one edge of the pastry strip lightly with beaten egg to help seal. Fold the other side of the pastry over the pork mixture and press to seal the edges tightly. Place the seam side down on the parchment-lined baking tray.
