Perfect as a dip, drizzle, or topping, this easy-to-make green sauce comes together in just 15 minutes, making it an ideal addition to tacos, enchiladas, or even grilled veggies. Add this crowd-pleaser to your table for a bold Tex-Mex flair!
Husk and rinse the tomatillos under cool running water to remove any sticky residue.
Cut the tomatillos in half and place them in a dry skillet over medium heat, cut side down. Roast for 4-5 minutes until they develop charred spots.
Remove the stem from the jalapeño and, if desired, remove the seeds for less heat. Roughly chop the jalapeño.
In a blender or food processor, combine the roasted tomatillos, jalapeño, avocado, garlic, onion, lime juice, cilantro, sour cream, olive oil, salt, and water.
Blend on high speed until the mixture is smooth and creamy. Stop and scrape down the sides of the blender as needed to ensure everything is fully incorporated.
Taste the sauce and adjust for seasoning, adding more salt or lime juice as desired.
Transfer the sauce to a serving bowl or airtight container. Serve immediately or refrigerate for up to 3 days.
