In a small bowl, mix the ground flaxseed and water to create a flax egg. Let it sit for 5 minutes to thicken.
Crumble the tempeh into small pieces and add it to a food processor along with the drained and rinsed white beans.
Add the onion powder, garlic powder, smoked paprika, ground fennel seeds, dried sage, dried thyme, soy sauce, maple syrup, black pepper, and optional salt to the food processor.
Process the mixture until it is well-combined but not completely smooth. It should still have some texture.

Scoop out about 2 tablespoons of the mixture at a time and form it into a small patty with your hands. Repeat until all of the mixture has been used (you should get about 8 patties).
