📝 Instructions

7 steps
1

Rinse the lentils under cold water to remove any debris. Place them in a medium-sized saucepan with 4 cups of water and 1 teaspoon of salt. Bring the water to a boil, then reduce the heat to medium-low and simmer for 20-25 minutes until tender but not mushy. Drain and set aside.

2

While the lentils cook, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the fideo noodles (or broken spaghetti pieces) and toast them, stirring frequently, until they turn golden brown. Be careful not to burn them. Remove the toasted noodles from the skillet and set aside.

3

In the same skillet, add the remaining 2 tablespoons of olive oil and sliced onions. Cook the onions over medium heat, stirring occasionally, until they caramelize and turn deep golden brown, about 15-20 minutes.

4

Once the onions are caramelized, reduce the heat to low and stir in the ground cumin, ground cinnamon, and ground black pepper. Cook for 1 minute to toast the spices.

5

Add the cooked lentils and toasted noodles to the skillet with the onions and spices. Mix everything together gently and add 1 cup of water. Cover the skillet and cook over low heat for 10 minutes, allowing the noodles to absorb the liquid and become tender.

6

Taste and adjust seasoning, adding more salt or pepper if needed.

7

Serve warm, garnished with freshly chopped parsley, if desired. Enjoy your Syrian Noodles with Lentils!
