Preheat your oven to 375Β°F (190Β°C).
Bring a large pot of water to a boil and add a generous pinch of salt. Chop the cauliflower into bite-sized florets and blanch them in the boiling water for 3-4 minutes until just tender. Drain and set aside.
In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 1-2 minutes to form a roux.
Slowly pour in the milk, whisking constantly to avoid lumps. Continue to cook over medium heat until the sauce thickens, about 4-5 minutes.
