πŸ“ Instructions

11 steps
1

Preheat your oven to 450Β°F (230Β°C). Line a baking sheet with parchment paper or aluminum foil.

2

Cut the red bell peppers into halves, removing the seeds and stems. Place them cut side down on the prepared baking sheet.

3

Roast the red peppers in the oven for 20-25 minutes, or until the skins are charred and blistered. Once done, transfer the peppers to a bowl and cover tightly with plastic wrap. Let them cool for 10 minutes.

4

While the peppers are cooling, bring a large pot of salted water to a boil. Add the ziti pasta and cook until al dente according to the package instructions. Reserve 1 cup of pasta water, then drain and set aside.

5

Peel the charred skin off the cooled peppers and transfer them to a blender or food processor.

6

In a skillet, heat the olive oil over medium heat. Add the garlic and onion, cooking for 3-4 minutes or until softened and fragrant.

7

Transfer the cooked garlic and onion to the blender with the peppers. Add the vegetable broth, heavy cream, 1/2 cup of Parmesan cheese, red pepper flakes, salt, and black pepper. Blend until smooth and creamy.

8

Pour the red pepper sauce back into the skillet and heat gently over medium-low heat. If the sauce is too thick, stir in a bit of the reserved pasta water until it reaches your desired consistency.

9

Add the cooked ziti to the skillet, tossing to coat the pasta evenly in the sauce.

10

Divide the Sweet Red Pepper Ziti into serving bowls. Top with the remaining Parmesan cheese and garnish with fresh basil leaves.

11

Serve immediately and enjoy!
