In a medium-sized pot, heat the olive oil over medium heat. Add the Arborio rice and toast it lightly for 2-3 minutes.

Gradually add the chicken or vegetable stock, one ladle at a time, stirring constantly until the liquid is absorbed. Repeat until the rice is fully cooked and creamy (about 18-20 minutes).
