Place the raw cashews in a small bowl and cover them with hot water. Let them soak for 10β15 minutes while preparing the vegetables.
Peel and roughly chop the carrot and potato into small chunks.
In a medium-sized pot, bring 3 cups of water to a boil. Add the chopped carrot and potato and cook for 10β12 minutes, or until they are tender and can be easily pierced with a fork. Drain and set aside.
Drain the soaked cashews and add them to a blender along with the cooked carrot and potato, nutritional yeast, garlic powder, onion powder, turmeric powder, lemon juice, plant-based milk, salt, and black pepper.
Blend the mixture on high until it becomes completely smooth and creamy. You may need to scrape down the sides of the blender a couple of times to ensure everything is blended evenly. If the sauce is too thick, add a tablespoon of plant-based milk at a time to reach your desired consistency.
Taste and adjust the seasoning if needed by adding a bit more salt, pepper, or lemon juice.
Transfer the cheesy sauce to a saucepan and heat over medium-low heat for 3β5 minutes, stirring occasionally, until warmed through.
