In a large mixing bowl, combine the rolled oats, almonds, sunflower seeds, shredded coconut, chia seeds, ground cinnamon, and salt. Stir well to evenly distribute the dry ingredients.
In a small saucepan over low heat, combine the melted coconut oil, honey, and vanilla extract. Stir the mixture until well combined, then remove from heat.
Pour the coconut oil and honey mixture over the dry ingredients, stirring thoroughly to ensure everything is evenly coated.
