Preheat your oven to 375°F (190°C).

Rinse the Cornish hens under cold water and pat them dry with paper towels. Sprinkle the inside and outside with salt and black pepper. Set aside.

In a medium skillet, heat 1 tablespoon of olive oil and 2 tablespoons of butter over medium heat. Add the chopped onion and celery and sauté for 4-5 minutes until softened. Add the minced garlic and cook for an additional minute.
