Cut the chicken breast into thin strips and season with salt and black pepper.
Peel and slice the mango into bite-sized pieces and set aside.
Slice the red, yellow, and green bell peppers into thin strips. Mince the garlic and grate the ginger.
In a small bowl, whisk together the soy sauce, honey, cornstarch, and 2 tablespoons of water to make the stir-fry sauce.
Heat a large skillet or wok over medium-high heat and add the vegetable oil.
Add the chicken to the pan and stir fry for 4-5 minutes until cooked through. Remove the chicken from the pan and set aside.
In the same pan, add the garlic and ginger and stir-fry for 30 seconds until fragrant.
Add the bell peppers to the pan and stir-fry for 2-3 minutes until slightly softened but still crisp.
Return the chicken to the pan and pour in the stir-fry sauce. Toss to coat the chicken and vegetables evenly.
