1. Prepare the artichokes by cutting off the top inch of each artichoke with a sharp knife and trimming the stem to about 1 inch in length. Remove any tough or damaged outer leaves and use kitchen scissors to snip off the pointed tips of remaining leaves.

2. Slice the lemon in half. Rub the cut edges of the artichokes with lemon to prevent discoloration, and set the remaining lemon halves aside.
