Preheat the oven to 200°C (400°F).

Peel and cube the pumpkin into 2 cm pieces. Place in a bowl and toss with 2 tablespoons of olive oil, 1 teaspoon of fresh thyme, and a pinch of salt and pepper.

Spread the pumpkin on a baking tray lined with parchment paper and roast in the oven for 25-30 minutes, turning halfway through, until tender and golden brown.

Add the garlic cloves (smashed but still in their skins) and the steak to the pan. Sear the steak for 3-4 minutes per side for medium-rare, or adjust the cooking time for your desired level of doneness.

Once cooked, remove the steak from the pan and rest on a plate covered with foil for 5 minutes.

To serve, slice the steak and arrange on plates. Top with caramelised red onion, crumbled feta cheese, and the roasted pumpkin.
