Gradually pour in the beef stock while stirring continuously to prevent lumps. Bring the mixture to a simmer and allow it to thicken for about 5 minutes.

Lower the heat and stir in the sour cream, Dijon mustard, and paprika. Mix until well combined. Return the seared beef to the skillet and let it simmer for 3-5 minutes to reheat and allow flavors to meld. Taste and adjust the seasoning with additional salt and pepper if needed.

Remove the warmed dinner rolls from the oven. Using a serrated knife, slice each roll in half horizontally to create a flat surface for stacking.
