📝 Instructions

12 steps
1

Preheat your oven to 450°F (232°C).

2

Place the red bell peppers onto a baking sheet lined with parchment paper and roast for 20 minutes, turning once halfway through, until the skin is charred.

3

While the peppers roast, bring 8 cups of water to a boil in a large pot, add 1 tsp of salt, and cook the spiral pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

4

Once the roasted peppers are done, place them in a bowl and cover with plastic wrap or a plate for 10 minutes to steam. Peel off the charred skin and remove the seeds.

5

In a blender, combine the roasted peppers, garlic cloves, heavy cream, 1 tbsp of olive oil, grated Parmesan cheese, and a pinch of salt and black pepper. Blend until smooth and creamy.

6

Heat a large skillet or saucepan over medium heat and melt 2 tbsp of unsalted butter along with the remaining 2 tbsp olive oil.

7

Add the creamy roasted red pepper sauce to the skillet and let it simmer for 5 minutes, stirring occasionally. If it seems too thick, slowly add the reserved pasta water until the desired consistency is achieved.

8

Toss the drained spiral pasta into the sauce, ensuring every piece is evenly coated.

9

Reduce the heat to low and stir in the baby spinach, allowing it to wilt slightly. Add the cherry tomatoes and cook gently for 2 more minutes.

10

Season the pasta with the remaining salt, black pepper, and optional red chili flakes for a little heat.

11

Plate the pasta, garnish with fresh basil leaves, and sprinkle extra Parmesan cheese on top if desired.

12

Serve immediately and enjoy your Spiral Supreme Pasta Excellence!
