Bring a large pot of salted water to a boil and cook the lasagna noodles according to package instructions, until al dente. Drain and lay the noodles flat on a clean kitchen towel to prevent sticking.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Add the spinach and cook until wilted, about 3-4 minutes. Remove from heat and allow to cool slightly.

In a large mixing bowl, combine the ricotta cheese, 1 cup of shredded mozzarella, Parmesan cheese, egg, salt, pepper, and the cooled cooked spinach. Mix until well combined.

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
