Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
Wash the spinach, then wilt it by briefly steaming or sautéing. Allow it to cool slightly, then squeeze out excess water and roughly chop.
In a mixing bowl, combine the chopped spinach, ricotta cheese, Parmesan cheese, 1 egg, minced garlic, salt, pepper, and nutmeg (if using). Mix thoroughly until evenly combined.
Place one puff pastry sheet on a clean surface. Spoon half of the spinach and ricotta mixture along one edge of the pastry, leaving about 2 cm of space at the edge.
