Place the chicken breasts on a cutting board and gently pound them with a meat mallet to even out their thickness.
In a small bowl, mix the Cajun seasoning, garlic powder, paprika, salt, and black pepper. Coat each chicken breast evenly with the seasoning mixture on both sides.
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Cook the chicken breasts for about 4-5 minutes per side, or until they are golden brown and cooked through (internal temperature should reach 165Β°F/74Β°C). Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil and butter. Reduce the heat to medium and add the minced garlic. SautΓ© for about 1 minute or until fragrant.
Pour in the chicken broth and scrape the bottom of the skillet with a wooden spoon to deglaze the pan. Let it simmer for 2-3 minutes to slightly reduce.
