1. Split the vanilla bean lengthwise with a sharp knife and scrape out the seeds using the back of the knife. Set both the seeds and the pod aside.

2. In a medium saucepan, combine the heavy cream, whole milk, half of the granulated sugar (3/8 cup), the vanilla bean seeds, and the pod. Heat the mixture over medium heat until it just begins to steam and small bubbles form, but do not let it boil. Remove from heat and let it steep for 10 minutes.

3. While the cream mixture steeps, whisk together the egg yolks, the remaining 3/8 cup of granulated sugar, and salt in a medium bowl until the mixture is pale and creamy.

4. Gradually temper the egg yolk mixture by slowly adding about 1 cup of the warm cream mixture while whisking constantly. Pour the tempered yolk mixture back into the saucepan with the remaining cream mixture.

7. Allow the custard to cool to room temperature, then cover the bowl with plastic wrap, pressing the plastic directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours or overnight until thoroughly chilled.
