  • 0.5 teaspoon Freshly ground black pepper

Fill a large pot with water, add a pinch of salt, and bring it to a rolling boil. Cook the spaghetti according to the package directions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.

While the pasta is cooking, prepare the sauce. Score an 'X' on the bottom of each tomato. Blanch them in boiling water for 30 seconds, then transfer them to an ice water bath. Peel the skins, then chop the tomatoes into small chunks.

Peel and finely mince the garlic cloves. Heat the olive oil in a large skillet over medium heat and sauté the minced garlic for 1-2 minutes, until fragrant but not browned.

Add the chopped tomatoes to the skillet. Season with salt and black pepper. Simmer the mixture on low heat for 10-12 minutes, stirring occasionally, until the tomatoes break down and the sauce thickens slightly.

Add the cooked spaghetti directly to the skillet with the sauce. Toss well to coat the pasta evenly. If the sauce is too thick, add a little reserved pasta water, one tablespoon at a time, until the desired consistency is achieved.
