📝 Instructions

12 steps
1

Preheat your oven to 190°C (375°F).

2

Slice the smoked sausage into 1-cm (½-inch) rounds. Set aside.

3

Heat olive oil in a large ovenproof skillet or casserole dish over medium heat.

4

Dice the onion and mince the garlic, then add them to the skillet. Sauté for 3-4 minutes until fragrant and soft.

5

Peel and slice the carrots, and chop the celery into small pieces. Add these to the skillet and cook for another 5 minutes.

6

Halve the baby potatoes and add them to the skillet, stirring well to coat everything in the oil.

7

Stir in the can of diced tomatoes, chicken stock, dried thyme, oregano, paprika, salt, and black pepper. Mix thoroughly.

8

Add the sliced smoked sausage to the mixture, stirring to combine.

9

Bring the mixture to a low simmer, then cover the skillet (or transfer the mixture to a covered casserole dish if needed).

10

Transfer the skillet to the preheated oven and bake for 35 minutes, stirring once halfway through to ensure even cooking.

11

Once cooked, remove the casserole from the oven and sprinkle Parmesan cheese and freshly chopped parsley over the top.

12

Serve warm, and enjoy your hearty smoked sausage casserole!
