Place the chicken breasts in the bottom of the slow cooker.
Sprinkle the chicken with garlic powder, onion powder, salt, and pepper.
In a medium bowl, whisk together the chicken broth and cream of chicken soup until smooth. Pour the mixture over the chicken.
Add the butter to the slow cooker in small pieces and place it on top of the chicken.
Cover the slow cooker and cook on low heat for 4 hours.
After 4 hours, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker.
Rinse the rice under cold water until the water runs clear. Add the rice and frozen mixed vegetables (if using) to the slow cooker. Stir to combine.
Cover and cook on low for an additional 1.5–2 hours, or until the rice is tender and all the liquid is absorbed.
Stir in the shredded cheddar cheese until melted and evenly distributed.
Taste and adjust seasoning with additional salt and pepper, if necessary.
Serve warm, garnished with fresh parsley if desired. Enjoy!
