Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions (usually 8-11 minutes) until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

While the pasta is cooking, cut the chicken breasts into bite-sized pieces. Season the chicken with a pinch of salt and black pepper.
