Preheat your oven to 180°C (350°F).
Wash the silverbeet thoroughly and chop it into small pieces, discarding any tough stems.
Heat olive oil in a large pan over medium heat. Add the onion and garlic, and sauté for 5 minutes until softened and fragrant.
Add the chopped silverbeet to the pan and cook for 5-7 minutes until wilted. Remove from heat and allow to cool slightly.
In a large mixing bowl, combine the cooked silverbeet mixture, crumbled feta, ricotta cheese, eggs, parsley, dill (if using), salt, and black pepper. Mix until evenly combined.
Roll out the shortcrust pastry on a floured surface and line a 23cm (9-inch) pie dish, ensuring the pastry fits snugly against the edges. Trim any excess pastry.
Pour the silverbeet filling into the prepared pastry shell, spreading it out evenly.
If desired, sprinkle sesame seeds over the top of the filling for added texture and flavor.
Bake the pie in the preheated oven for 35-40 minutes, or until the filling is set and the pastry is golden brown.
Remove the pie from the oven and allow it to cool slightly before slicing. Serve warm or at room temperature.
