In a small bowl, mix the soy sauce, oyster sauce, and sesame oil. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
Add the shrimp and cook for 2-3 minutes per side until they are pink and cooked through. Remove the shrimp from the skillet and set aside.
Add the remaining 1 tablespoon of vegetable oil to the skillet. Add the beaten eggs and scramble until just set, then remove the eggs and set aside with the shrimp.
In the same skillet, add the garlic, ginger, and the white parts of the scallions. SautΓ© for 30 seconds until fragrant.
Add the carrot, Napa cabbage, and peas to the skillet. Cook for 3-4 minutes until the vegetables are tender.
Increase the heat to high and add the cooled rice to the skillet. Stir well to break up any clumps of rice and evenly distribute the vegetables.
Drizzle the soy sauce mixture over the rice and stir evenly to coat all the ingredients.
Return the shrimp and scrambled eggs to the skillet. Stir gently to combine all the ingredients and heat through.
Season with salt and black pepper to taste. Garnish with the green parts of the scallions before serving.
Serve hot and enjoy your Shrimp and Egg Fried Rice with Napa Cabbage!
