Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the sausage meat, breadcrumbs, finely chopped onion, parsley, minced garlic, salt, and ground black pepper. Mix thoroughly until well combined.
On a lightly floured surface, roll out the puff pastry into a large rectangle, approximately 40cm x 25cm.
Cut the pastry in half lengthwise to create two long strips.
Divide the sausage mixture into two equal portions. Shape each portion into a long log and place it lengthwise along the center of each pastry strip.
Brush one of the long edges of the pastry with beaten egg to help seal it. Fold the other edge of the pastry over the filling and press to seal, creating a long sausage-filled roll.
