📝 Instructions

10 steps
1

Peel and dice the potatoes into small chunks. Place them in a pot of salted water, bring to a boil, and cook until tender, about 10-12 minutes. Drain and mash until smooth. Set aside to cool slightly.

2

In a skillet over medium heat, cook the sausage until browned and fully cooked, breaking it apart into small crumbles. Drain any excess grease and set aside to cool.

3

In a large mixing bowl, combine the mashed potatoes, cooked sausage, all-purpose flour, shredded cheddar cheese, egg, garlic powder, salt, black pepper, and paprika. Mix until well combined. If desired, stir in chopped parsley for added freshness.

4

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

5

On a lightly floured surface, roll out the puff pastry sheets. Cut each sheet into approximately 9 equal squares.

6

Spoon a tablespoon of the sausage-potato mixture onto the center of each puff pastry square. Fold the corners of the pastry up and pinch the edges to seal tightly, forming a small bundle.

7

Place the bundles seam-side down on the prepared baking sheet.

8

In a small bowl, whisk together the second egg and 1 tablespoon of water to create an egg wash. Brush the tops of the potato puffs with the egg wash to give them a golden finish.

9

Bake in the preheated oven for 18-20 minutes, or until the pastry is golden brown and puffed.

10

Remove from the oven and allow to cool slightly before serving. Serve warm and enjoy!
