Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.
Add the sausage links and cook until browned on all sides, about 5β7 minutes. Remove the sausages from the pot and set aside.
Dice the yellow onion, carrots, and celery. Mince the garlic cloves.
In the same pot, sautΓ© the onions, carrots, and celery for 5β7 minutes, or until softened and fragrant.
