📝 Instructions

11 steps
1

Preheat your oven to 400°F (200°C).

2

If using fresh Saskatoon berries, rinse and remove any stems. If using frozen berries, allow them to thaw and drain any excess liquid.

3

In a large bowl, combine the Saskatoon berries, granulated sugar, all-purpose flour, cornstarch, cinnamon, salt, and lemon juice. Mix well to coat the berries evenly and set aside.

4

Roll out one half of the pie crust on a floured surface to fit a 9-inch pie dish. Carefully transfer the crust into the dish, trimming any overhanging edges.

5

Pour the prepared berry mixture into the pie crust. Dot the filling with small pieces of butter to enhance richness.

6

Roll out the second half of the pie crust and place it on top of the filling. You can create a lattice design or simply cover the top entirely, sealing and crimping the edges to prevent leaks. Cut small slits in the top crust (if not using a lattice) to allow steam to escape during baking.

7

In a small bowl, whisk together the egg and water to create an egg wash. Brush the egg wash over the top crust for a golden, shiny finish. Sprinkle coarse sugar on top if desired.

8

Place the pie on a baking sheet to catch any drips, and bake in the preheated oven for 15 minutes.

9

Reduce the oven temperature to 375°F (190°C) and continue baking for an additional 30 minutes, or until the crust is golden brown and the filling is bubbling.

10

Remove the pie from the oven and allow it to cool for at least 2 hours before serving. This will help the filling set.

11

Serve the Saskatoon Pie on its own or with a scoop of vanilla ice cream for a truly indulgent treat.
