This easy yet elegant side dish pairs beautifully with roast turkey, chicken, or grilled vegetables, making it an ideal addition to your holiday table or any cozy dinner. Ready in just 40 minutes, these mashed potatoes are both a weeknight win and a celebration-worthy crowd-pleaser.
Peel the russet potatoes and chop them into evenly sized chunks. Rinse well under cold water.
Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt to the water.
Bring the pot to a boil over medium-high heat, then reduce to a simmer. Cook for 15-20 minutes, or until the potatoes are fork-tender.
While the potatoes are cooking, slice the yellow onion thinly. Heat the olive oil and 2 tablespoons of butter in a medium skillet over medium heat.
Add the sliced onion to the skillet and cook, stirring occasionally, for 8-10 minutes until softened and caramelized.
Chop the fresh sage leaves finely and add them to the skillet with the onions during the last 2 minutes of cooking. If using garlic, mince it and add at this time as well. Stir and cook until fragrant. Remove from heat and set aside.
Drain the cooked potatoes and return them to the pot. Allow them to sit for 1-2 minutes to let excess moisture evaporate.
Mash the potatoes using a potato masher or ricer until smooth.
In a small saucepan, warm the milk (or heavy cream) with the remaining 2 tablespoons of butter over low heat until the butter melts.
Slowly pour the warm milk mixture into the mashed potatoes, stirring until smooth and creamy.
Fold in the caramelized onions and sage mixture. Season with salt and black pepper to taste, adjusting as needed.
Serve the Sage and Onion Mashed Potatoes immediately, garnished with a few extra sage leaves if desired.
