📝 Instructions

7 steps
1

Bring a large pot of salted water to a boil over medium-high heat. Cook the spaghetti until al dente, following the package instructions. Reserve 1 cup of pasta cooking water before draining.

2

While the pasta cooks, dice the pancetta (or guanciale) into small cubes.

3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the pancetta and cook until it becomes crispy and golden, about 5-7 minutes. Remove the skillet from heat, but leave the pancetta in the pan.

4

In a large mixing bowl, whisk together the egg yolks, whole egg, Parmesan cheese, Pecorino Romano cheese, and freshly ground black pepper until smooth.

5

Immediately after draining the pasta, transfer it to the skillet with the pancetta. Toss the pasta gently to coat it in the rendered fat.

6

Slowly add the egg and cheese mixture to the hot pasta, tossing quickly to create a creamy sauce. Add reserved pasta water, 1 tablespoon at a time, if the sauce is too thick. Continue tossing until the sauce evenly coats the pasta.

7

Taste and adjust seasoning with additional black pepper or salt if needed. Serve immediately, garnished with extra grated cheese and a sprinkle of freshly ground black pepper.
