Rinse the dried pinto beans thoroughly under cold water and pick out any debris or bad beans.

In a large pot, combine the rinsed beans and 8 cups of water. Add the halved onion and smashed garlic cloves to the pot.

Bring the pot to a boil over high heat, then reduce the heat to a low simmer. Cover the pot and cook the beans for about 1.5-2 hours, or until they are tender. Stir occasionally to prevent sticking.
