📝 Instructions

10 steps
1

In a medium bowl, combine the crushed graham crackers (or digestive biscuits) with the melted butter. Mix thoroughly until the texture is like wet sand.

2

Press the crumb mixture into the bottom of an 8-inch (20 cm) springform pan or serving glasses to form the base. Use the back of a spoon to flatten and pack it tightly. Refrigerate for at least 10 minutes to set.

3

In a small saucepan over medium heat, add 150 grams of raspberries and the caster sugar. Cook and stir for about 5 minutes until the raspberries break down and form a sauce-like consistency. Remove from heat and strain the mixture through a fine-mesh sieve to remove seeds. Allow the raspberry sauce to cool.

4

In a large mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract together until smooth and creamy.

5

In a separate bowl, whip the heavy cream until it forms stiff peaks. Gently fold the whipped cream into the cream cheese mixture until well combined.

6

Spread half of the cream mixture evenly over the biscuit base, then drizzle some of the raspberry sauce on top. Use a spoon or skewer to swirl it slightly.

7

Scatter half of the remaining fresh raspberries on top, pressing them gently into the cream layer.

8

Repeat with another layer of the cream mixture, raspberry sauce, and the remaining fresh raspberries as a decorative topping.

9

Chill the dessert in the refrigerator for at least 3 hours or overnight to set completely.

10

Before serving, optionally decorate with fresh mint leaves for a pop of color and freshness. Serve chilled and enjoy!
