📝 Instructions

8 steps
1

Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Reserve 1 cup of pasta water before draining.

2

Heat the olive oil in a large skillet over medium heat. Add the sliced chorizo and cook for 3-4 minutes until slightly crisp. Remove the chorizo from the pan and set aside.

3

In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute.

4

Add the smoked paprika and red chili flakes to the pan, stirring to coat the onions and garlic.

5

Pour in the crushed tomatoes and season with salt and black pepper. Reduce the heat and let the sauce simmer gently for 8-10 minutes, stirring occasionally.

6

Return the cooked chorizo to the skillet and stir to combine. Add the drained pasta to the sauce, tossing to coat the pasta evenly.

7

If the sauce is too thick, gradually add small amounts of the reserved pasta water until the desired consistency is reached.

8

Serve the pasta hot, garnished with grated Manchego cheese and chopped parsley.
