While the potatoes cook, prepare the fish. Place the white fish fillets and smoked haddock fillets in a large, deep skillet. Pour 300 ml of milk over the fish, bring to a gentle simmer, and poach the fish for about 5 minutes until it flakes easily. Remove the fish from the skillet, keeping the milk for the sauce.
Flake the fish into bite-sized pieces into a mixing bowl. Add the cooked prawns and chopped parsley. Set aside.
