In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper, chopped red onion, and minced garlic. Sauté for 3-4 minutes until the vegetables are softened.
In a mixing bowl, combine the shredded cooked chicken, sautéed vegetables, cheddar cheese, Monterey Jack cheese, cilantro, salt, and black pepper. Mix until well combined.
Lay a flour tortilla flat on a clean surface. Spread about 1/4 of the chicken mixture evenly over one half of the tortilla. Fold the tortilla over to form a half-moon shape. Repeat with the remaining tortillas and filling.
Heat the remaining 1 tablespoon of olive oil in a large skillet over medium heat. Place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas.
