Line an 8x8-inch square baking pan with parchment paper, leaving some overhang for easy removal, and set it aside.
In a medium-sized saucepan, combine the sweetened condensed milk, white chocolate chips, unsalted butter, and salt.
Place the saucepan over medium-low heat and stir constantly until the chocolate chips and butter are completely melted and the mixture is smooth (about 5 minutes).
Remove the saucepan from heat and quickly stir in the pistachio pudding mix, vanilla extract, and, if desired, a drop of green food coloring for an added pop of color.
Fold in the chopped pistachios, reserving a small handful for garnishing the top of the fudge.
Pour the mixture into the prepared pan and spread it out evenly using a spatula.
Sprinkle the reserved chopped pistachios evenly over the top and gently press them into the fudge.
Let the fudge cool at room temperature for 1 hour, then transfer it to the refrigerator to set completely for at least 2 hours.
